Cinnamon maple crumb cupcakes

A healthier twist to the classic cinnamon crumb cake. Pairs best with a cup of coffee!


CAKE INGREDIENTS

3 eggs

1/3 cup coconut oil

1/2 cup maple syrup

1 tsp vanilla extract

2 cups almond flour

1 tsp baking soda

2 tsp cinnamon

Pinch of salt


CRUMB TOPPING

3/4 cup almond flour

1/2 cup coconut sugar

5 tsp coconut oil

2 tsp cinnamon


DIRECTIONS ~Makes 9 cupcakes

Heat oven to 350. Mix together wet ingredients first and then mix in dry ingredients until well combined. Spray muffin tins with coconut spray (or non-stick spray). Pour batter 3/4 high into muffin tin. Generously pour crumb topping onto the batter to fill the muffin tin. Bake for 20-22mins. Let cool for 5-10mins before diving in!
