Sometimes you just want a classic chocolate chip cookie. THIS is that, with a vegan twist.
1 flax egg ( mix 1 tbsp ground flax + 3 tbsp warm water- let sit for 5-10mins)
1/3 cup creamy nut butter (I rec cashew butter)
1/3 cup maple syrup (I used maple/agave blend)
1 tsp vanilla extract
3 tbsp coconut oil (melted)
1 1/2 cup almond flour
3 tbsp coconut flour
1/2 tsp baking powder
1/2 cup dark chocolate chips (I rec Endangered Species or Lily's)
DIRECTIONS: ~Makes 10-12 cookies
Preheat oven to 350. Line a baking sheet with parchment paper or aluminum foil. In a large bowl, mix together the flax egg, nut butter, maple syrup, oil and vanilla extract until smooth. In a separate bowl, mix together the flours and baking powder until well combined, then slowly pour into the "wet" bowl. Combine well, then fold in chocolate chips. Spoon out dough into hands to form cookies, "slap" the cookie down just a little bit, and add to baking sheet. Bake for 15-17 mins. Allow the cookies to cool, and then dive in!
