Vegan chocolate chunk tahini cookies

A vegan remake to @rachaelsgoodeats classic tahini cookies. These are to die for!!


INGREDIENTS

1 flax egg

1/2 cup tahini

1 tsp vanilla extract

3 tb agave or maple syrup

2 tb coconut oil

1/3 cup cacao powder

2-3 tb almond flour

Pinch of flaky sea salt

1/4 tsp baking soda

1/3 cup sugar-free dark chocolate chips (I use Lily’s, lakanto, or enjoy life brands)


DIRECTIONS

Preheat oven to 350. In a large bowl, whisk together flax egg (1tb ground flax with 3 tb warm water- stir and let sit for 5 mins), tahini, vanilla, agave, and coconut oil until well-combined. Slowly fold in cacao powder, almond flour, baking soda, and then chocolate chips. Makes 12 cookies. Transfer dough to parchment paper or aluminum foil baking sheet and lightly spray coconut oil. Top dough with flaky sea salt and extra choco chips. Bake for 10min. Let cool for at least 5-10min and then dive in!
