These satisfy my sweet teeth, plus they're filled with fiber and protein!
1 cup rolled oats
¼ cup almond flour
1 cup peanut butter
½ cup maple syrup
½ tsp sea salt
1 tsp vanilla
Optional: Add in ¼ cup collagen powder
DIRECTIONS ~Makes about 9
Grease a muffin tin. Fill the cups ¾ of the way- you want to leave room for the pb/chocolate topping. Place in the freezer for 90mins.
½ cup chocolate chips ( I use Enjoy Life brand or Lily’s )
2 TB peanut butter
Melt topping ingredients in the microwave together for 50-55 seconds. Stir. Spoon topping onto top of oat cups and smooth out with back of spoon. Place back in the freezer for 30mins.
I cut mine into quarters to make them bite-sized (and to make them last longer!) YOU WILL LOVE!
