Peanut butter chocolate buckeyes

California just doesn't want it to be fall yet, with this 90 degree weather. Now is the time to get creative in the kitchen so you don't have to turn on the oven! Enter: Freezer-kept peanut butter chocolate buckeyes. Fun fact: Buckeyes are a popular candy in the Midwest and are called as such because they look like the nut of a buckeye tree.Well this is a healthier spin on the classic recipe. Made with only 4 ingredients, these vegan buckeyes are an easy, delicious, dairy-free dessert. Tastes just like a Reese's pb cup!
INGREDIENTS
Creamy peanut butter 1 cup
Coconut flour 2/3 cup
Agave 1/2 cup
Dark chocolate chips (Enjoy life or Lily's brand)
DIRECTIONS Combine pb, coconut flour, and maple syrup to create a thick dough. Mold into balls. Freeze for an hour. Melt chocolate. Stick a toothpick into frozen pb ball, dip into melted chocolate, and smooth over with a spoon. Place balls onto a piece of parchment paper. Freeze for another hour, and then keep them in the freezer to store. Enjoy!
