Pumpkin cookie dough bites

Who doesn't love cookie dough?! Now add some pumpkin and nut butter into the mix, and you've got yourself an instant love affair.


INGREDIENTS:

1/2 cup nut butter (I recommend half pb, half cashew)

2 tbsp canned pumpkin

1/2 cup + 2 tbsp oat flour (just grind up oats in a blender!)

3 tbsp maple syrup

1 tsp vanilla

1 tsp pumpkin spice

1/4 tsp salt

Mini dark choco chips (I recommend enjoylife chips)


DIRECTIONS:

Combine all ingredients well. Stick the dough in the fridge for 20mins. Remove it, lay it flat on a cutting board, and roll it out to 1/2 inch thick with a rolling pin (or wine bottle :p). Then use a knife to cut into little square bites. Store in the freezer, and enjoy!
